These easy breakfast burritos are a staple at our house! There are many ways to make a breakfast burrito. I like to keep it simple with some breakfast sausage, eggs, veggies, and cheese. You can easily swap out ingredients based on your preferences and what you have on hand. These are also great for meal prep to enjoy throughout the week. There’s nothing like a warm breakfast burrito in the morning, and these are delicious.

How to Make Breakfast Burritos
- Choose your favorite breakfast sausage, or feel free to substitute a different breakfast protein like ham or bacon. Cook over medium heat in a large skillet
- Add some veggies and cook them with the sausage until the veggies are tender – I like dicing onion and bell pepper.
- Use egg whites (½ cup) or whisk some scrambled eggs (5 large eggs). Adding Italian seasoning and salt and pepper give the eggs a nice flavor.
- Divide the sausage, veggie and egg mixture between the tortillas and roll them into burritos, and don’t forget to add the cheese!
- Bake the burritos in the oven for just a few minutes, and you have a delicious meal wrapped in a flour tortilla.

Storing Breakfast Burritos
- Store homemade breakfast burritos in the refrigerator for three to four days in an airtight container or plastic wrap.
- Once burritos are completely cool, wrap each individually in plastic wrap and you can freeze in a large bag or airtight container for easy grab and go breakfasts. Allow to thaw overnight in the fridge.

- We like to make a batch of burritos ahead of time and serve them for breakfast all week long!
- Burritos can be stored in the freezer, but don’t microwave them frozen. Allow them to thaw first before reheating.
- When reheating the burritos, wrap in a paper towel before placing in the microwave to ensure the tortilla does not become chewy.

Ingredients
- 1 pound bulk breakfast sausage
- ½ medium onion diced
- 1 bell pepper diced
- ½ cup egg whites or 5 large eggs, lightly beaten
- ½ teaspoon Italian seasoning
- Salt and Pepper to taste
- 8 flour tortillas
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 350°F. Line a cookie sheet with aluminum foil and spray with nonstick cooking spray.
- Heat a large skillet over medium heat. Add sausage and break into small pieces while cooking. Cook until no pink remains, and sausage is cooked through. Carefully drain fat.
- Add onion and bell pepper to the sausage and cook until the vegetables soften, about 3 minutes
- Add egg whites (or beaten eggs) and Italian seasoning. Cook, stirring occasionally, until the eggs are completely cooked. Add salt and pepper to taste. Remove from heat.
- Lay out flour tortillas. Divide sausage egg mixture between the tortillas and top with 1-2 tablespoons of cheese each. Roll as desired.
- Place burritos on cookie sheet. If they don’t want to stay rolled, use a toothpick to hold them together.
- Bake about 5-8 minutes, then flip to the other side and bake an additional 5-8 minutes, or until golden on both sides. Serve hot.

Variations and Substitutions:
- Instead of breakfast sausage, try chorizo, diced ham, or bacon – if you prefer a vegetarian breakfast burrito, just leave out the meat and add extra veggies.
