Roasting is one of my favorite cooking methods, especially for vegetables. When you cook them at a high heat in the oven, they caramelize, and the natural sweetness comes out. For very little work, you can have a side dish with a lot of flavor.

Many vegetables are great for roasting (like broccoli and cauliflower), and green beans are one of them. When they are raw, they are crisp with a little bit of chew. However, once roasted, they soften and caramelize. They are delicious plain, but you can add other ingredients to give them more flavor.

Ingredient Notes

  • Green Beans: Either buy your beans washed and trimmed, or rinse and cut the ends off yourself.
  • Cheese: I prefer the parmesan cheese that comes grated into a powder (not shredded)
  • Seasonings: Salt, pepper, and garlic powder are the perfect spices.
  • Variations: You can add any seasonings you like – red pepper flakes, dried herbs (Italian seasoning is fantastic), cumin, paprika, even onion powder.

How to Roast Green Beans in the Oven

  • Preheat oven to 400°F – a hot oven is perfect for green beans.
  • I like to toss my beans with the oil, seasonings, and parmesan in a large bowl.
  • I like to cover my sheet pan with foil for easy cleanup.
  • Be sure to stir the green beans a few times while baking, that way they cook evenly.

Expert Tips

  • The flavors in this side dish pair with lots of main dishes. Try serving them with steak, baked chicken, or seared pork chops. They’re also delicious with fish like cod or salmon. For holidays, they will go great with ham, turkey, or roast chicken.
  • To know if they’re done: they should be softened and caramelized in spots but not burned. If you aren’t sure, taste one. It should be soft but not mushy.
  • Add a few squeezes of lemon juice or pepper for some more flavor!

FAQs

How do you store these green beans?

Keep them in an airtight container in the fridge, and they will keep well for a few days as leftovers. I don’t recommend freezing them once cooked; they’ll get too soft as they thaw.
