For easy weeknight dinners, I love the slow cooker. There’s nothing better than prepping some ingredients, leaving them to cook all day, and having dinner ready at night without any work (although my kid would disagree). Besides this steak we love Crockpot Ravioli Casserole and Crockpot Pot Roast.
This flank steak crock pot recipe is one of my favorites. It is a flavorful, lean cut of beef. Slow cooking flank steak breaks down all of the tough fibers, so it’s tender. It’s a really easy way to cook this cut of beef, and you can use it to make all kinds of dinners. It’s perfect for busy weeknights!
Ingredient Notes
- Flank Steak – This is a long, flat cut of meat known for its grain, bold flavor, and chewiness. It’s perfect for slow cooker recipes.
- Herbs & Spices: Rosemary and Sage are perfect herbs, and I love the addition of onion powder, salt, and garlic powder. You could also add some cumin, chili powder, and/or paprika, or other flavors you like. You can also use minced garlic cloves in place of the powder.
- Beer: I like to use a light-style beer. If you don’t want to use alcohol, you can omit and add additional beef stock.

How to make Flank Steak
- Combine all the spices together and then sprinkle and rub the spice mixture all over the meat to get the flavor into it.
- It’s important to sear the steak on both sides, like when you’re making pot roast, so that you lock in the flavor.
- We cook it on low for 5-6 hours – check it and make sure it’s shreddable. Save the juices to drizzle over the meat, or you can even make brown gravy with it.
Serving Suggestions
- Serve it over rice or pasta (or cauliflower rice)
- Cook some peppers and onions in a skillet and serve them with the steak and tortillas for easy beef fajitas tacos with cilantro.
- Sliced flank steak is great with mashed potatoes.
- Pile the meat in sliced rolls and top with cheese for delicious steak sandwiches.
Storing Instructions
- You can prep this ahead by adding all the herbs and searing it, then chill in the fridge up to overnight. Let come to room temp before adding to crockpot.
- Store leftovers in an airtight container in the refrigerator for up to 3 days and place in the freezer for up to a few months.
Expert Tips
- The total time can vary depending on your crockpot so make sure to check it – once it’s shreddable it’s done.
- Because you’re cooking it in the slow cooker it’s not going to be “medium” or “medium-rare” – it won’t be pink at all. That’s normal.

Crockpot Flank Steak Recipe
Ingredients
- 1 pound flank steak trimmed
- 1 teaspoon dried rosemary
- 1 teaspoon sage
- ½ teaspoon onion powder
- ½ teaspoon garlic salt or garlic powder
- ¼ cup beef stock
- 1 cup beer light beer works good
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- In a small bowl combine the rosemary, sage, onion powder, garlic salt, salt and pepper. Rub onto both sides of the flank steak.
- Add olive oil to a large skillet and pre-heat to medium high heat. Sear the flank steak on both sides for about 2 minutes per side.
- Put flank steak into the crockpot and then add the beer and beef stock. Cook on low for 5-6 hours. Check to see if it is easily shredded and is still a little pink in the middle.
- Serve with your favorite vegetables.
Recipe Notes
- Roasted red peppers, onions, corn and zucchini go well with this dish and you can get some good tortillas and turn it into fajita night.
- The leftovers are great for a steak sandwich with melted cheese on top.
- You can use many different flavor profiles to rub on the meat. Go with an Asian influence to add a totally different flavor
We do this all the time but with meat that is already seasoned. But I will try this one also.
