    Garlic Butter Grilled Corn on the Cob

    When you have fresh summer corn, it’s delicious just to toss it on a hot grill and slather it with butter. Even better is to slather it in garlic butter and Parmesan cheese – it’s a really easy way to give basic grilled corn an upgrade.

    My Favorite Way to Grill Corn

    I’ve grilled a lot of corn and have tried all kinds of methods. Leaving the husk on, removing it, and grilling the corn directly on the grates, and I’ve made grilled corn on the cob in foil. I think how you grill corn on the cob comes down to personal preference, and for me, I prefer to remove the husk and silk ahead of time and cook the corn in foil.

    I use foil for this recipe because I like to brush the corn with the butter mixture before cooking it. The foil keeps the garlic butter from dripping off while the corn cooks. But there are other reasons to use foil, even if you are cooking plain corn.

    Wrapping the corn in foil does a couple of things. First, it makes it hard to burn the kernels. I like lightly charred flavor, but if I am grilling multiple items in addition to corn, foil just adds a layer of protection in case I get distracted and forget to turn it. You still get delicious charred parts but with less worry of completely burning the corn.

    It also traps the heat and steams the corn, which makes it really juicy. Grilling corn directly on the grates can dry it out pretty quickly. The foil prevents that from happening. Leaving the corn in the husk does this too, but I think it’s more of a hassle to get rid of all the silk after the corn is cooked. Foil just makes it easy.

    Ingredients for Garlic Butter Grilled Corn on the Cob

    • Corn on the cob
    • Softened salted butter
    • Smashed garlic
    • Grated Parmesan cheese
    • Black pepper
    • Chopped parsley

    How to Grill Corn on the Cob

    Remove the husks and silk from the corn. Rinse the corn cobs and then set them aside.

    Combine the butter, garlic, pepper, and half of the cheese in a bowl.

    Tear off large pieces of foil. You need each piece to be big enough to wrap the ear of corn twice. Place one ear of corn on each piece of foil.

    Brush each ear with the butter mixture. Wrap the corn with the ends of the foil tucked in, so the corn is completely covered.

    Place the wrapped corn directly on the preheated grill grates. Cook it for 20 to 25 minutes, turning them every few minutes.

    Remove the corn and carefully open the foil. Garnish with chopped parsley and the rest of the Parmesan cheese before serving. For me, cooking corn on the cob on the grill is the only way to cook this summer favorite. The buttery garlic and cheese coating takes it to a whole new level.     Ingredients

    • 4 corns on the cob
    • 4 tablespoons salted butter
    • 2 cloves garlic smashed
    • ¼ cup parmesan cheese grated and separated
    • 1/8 teaspoon ground black pepper
    • Chopped parsley for garnish

    Instructions

    • Remove husks and silk from corn and rinse
    • In a small bowl, combine butter, garlic, pepper and half of the parmesan cheese. Tear off 4 lengths of aluminum foil long enough to leave a couple of inches on each end of the cob and wide enough that you can wrap around the cob at least two times. Place one cob on each piece of foil.
    • Using a brush, brush butter mixture on corn getting a thin layer on the entire surface. Roll the cobs up in the aluminum foil and wrap the ends in so the corn is fully covered
    • Pre-heat barbecue to medium high heat. Place foil wrapped cobs directly on the grill. Cook for about 20-25 minutes turning every few minutes. Remove from heat, carefully open the foil (it is very hot). Let sit for 5 minutes. Garnish with parsley and the remaining parmesan cheese. Serve!
