Even though summer is ending soon, I still love making corn salad. In fact, I make this salad all year long! Corn salad is easy and versatile and perfect when you’re tired of the basic salad you normally make.
This easy bacon avocado corn salad is also great as a taco filler; top chicken or fish tacos with it and you have the perfect relish!
This corn salad is Mexican inspired but it’s all American with bacon and avocado and a bit of heat from the jalapeño and chipotle dressing. It’s as close to a fresh corn salad as you can get; I used frozen corn!
Frozen or fresh corn is the best in a corn salad, but you can use a canned corn if that’s all you have. I know where we live you can find frozen corn all year long and I love it just as much as fresh. In fact, for making salads, I like frozen corn best because whenever I try and cut kernels off a cob I end up losing half of the kernel. Using frozen corn ensures you’ll have a fresh and full salad!
This Corn Salad recipe is perfect as a side dish, for a potluck, or as relish on tacos. It’s sweet and spicy and it’s the perfect summer salad recipe (all year long).
What’s in a corn salad?
The beauty of a corn salad like this is that you can make it however you want.
- Corn is the most important ingredient. Use frozen or fresh unless you can only get canned.
- Bacon – salty and crunchy bacon adds great texture to this salad.
- Avocado: corn, bacon, and avocado were meant to be together in salads.
- Jalapeño adds some spice.
- Red onion adds texture.
- Bell pepper adds color.
- Cilantro for even more flavor!
What dressing goes best on corn salad?
For this Tex-Mex inspired corn salad, I went with an easy homemade chipotle vinaigrette. It’s easily shaken together with just a few ingredients you already have:
- Lime juice
- Salt & Pepper
- Chipotle Chili Powder
- Olive Oil
The lime and vinegar gives a great acidity to the dressing, while the honey and chipotle combine for a sweet and smokey flavor. The salad is even better as it sits and the dressing can soak into each and every bite.
Easy Corn Salad
This easy Corn Salad recipe has bacon and avocado and a spicy chipotle dressing! It's the perfect side salad.
- 5 slices bacon
- 4 cups frozen corn, thawed
- 1 red pepper, diced
- 1/2 red onion, diced
- 1 medium jalapeño, diced
- 2 avocados, diced
- 1 cup cilantro, sliced
- 2 tablespoons fresh lime juice
- 2 tablespoons white wine vinegar
- 1 tablespoon honey
- 1 clove garlic, pressed
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon chipotle chili powder
- 1/2 cup olive oil
Cook bacon until crispy. Drain then crumble.
Toss together bacon with corn, pepper, onion, jalapeno, and avocados.
Make the dressing: place all ingredients in a jar. Seal and shake until emulsified. Pour over salad and toss.
Store covered in refrigerator for up to 2 days.
Corn salad is a great side dish for Hawaiian Chicken!
