Heat more olive oil in the same skillet over medium heat. Add the shrimp and cook them in the oil for about two minutes. Turn them and cook them for two more minutes or until they are pink and opaque.
Add pepper and onion mixture back into the skillet and stir to combine everything.
Cook the Cajun shrimp for about a minute to heat everything through. Garnish with parsley and serve with the lemon wedges on the side.
Recipe Tips
- If you use frozen shrimp, you will need to thaw them first. You can leave them in the refrigerator to thaw or thaw them in cold water for 30 minutes. It’s a good idea to pat them dry once they are thawed.
- You can serve Cajun shrimp with the peppers as a light meal or serve them over rice for a more filling meal.
- You can also toss the seasoned shrimp and vegetables with cooked pasta or just add some toasted garlic bread on the side.
- Leftover Cajun shrimp will keep for two days in the refrigerator.
