This Air Fryer Zucchini Recipe is one of the easiest side dishes you’ll ever make! It’s super simple with just a few ingredients and so flavorful – this air fryer recipe will become your favorite easy vegetable!

I love making air fryer zucchini as a side dish for so many recipes. Zucchini can get soggy when stir fried or baked and in the air fryer it stays crisp and delicious. Simply toss the squash with your favorite seasonings and it’s so good!

Plus – this is the best way to get your kids to like vegetables. Cut the zucchini into zucchini slices or fries and you have fun veggies they can eat with their hands!

How to Make Air Fryer Zucchini

  1. Grab two large or medium size zucchini at the grocery store and cut as desired.
  2. Seasonings: you can use any flavor spices, herbs, or spice blend you like, but we love to use garlic powder, onion powder, olive oil, salt, pepper, and Italian seasoning.
  3. Make sure that you only cook as much as will fit in a single layer in your air fryer basket. If you need more you’ll need to work in batches.
  4. Cooking in the air fryer makes it so you get the flavor of roasted zucchini without the hassle of the oven.

Dorothy’s Tips

  • Make sure to cut all the squash the same size so it cooks evenly.
  • I’ve also done this same recipe and pressed the zucchini fries into panko bread crumbs or Italian breadcrumbs to add a crunch.
  • Feel free to create any variations you like – we also love adding thyme, parmesan cheese, paprika, oregano, and/or red pepper flakes.
  • There are so many great sides and appetizers you can make in the air fryer!

Storage of Leftover Zucchini

  • Store leftovers in an airtight container in the refrigerator.
  • Reheat in the air fryer to crisp up.

Ingredients
 

  • 2 large zucchini
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon Italian seasoning
  • 1 tablespoon olive oil

Instructions

  • Slice zucchini as desired (in rounds or wedges; just make sure they’re even sizes).
  • Stir together salt, pepper, garlic powder, onion powder, and Italian seasoning.
  • Toss zucchini with olive oil and spices in a large bowl.
  • Place in a single layer in the air fryer and cook at 385°F for about 8-15 minutes depending on size and thickness. Check after 5 minutes to gauge time and flip them.
