I am all about simple side dish recipes and really love easy vegetable sides but get tired of the same old salads and cooked veggies. So, I am always looking for new and creative ways to cook veggies, and I have got an excellent recipe for you today: oven-roasted mushrooms!

The BEST Oven Roasted Mushrooms Recipe

We roast veggies all the time but never thought to roast mushrooms until we read the new book The Ultimate Guide to Vegetable Side Dishes by our friend Rebecca Lindamood from Foodie with Family.

If you’ve ever wondered if you can roast mushrooms in the oven, I am happy to tell you we were blown away by this recipe! When you roast them, the moisture cooks out, so you’re left with delicious meaty mushrooms with the most amazing texture. It’s a fantastic side dish recipe.

You don’t need many ingredients for oven roasted portobello mushrooms, but the flavors are big! Trust me – if you’ve never tried it, you are going to love it. This is seriously one of the best vegetable side dishes we’ve ever had.

Ingredients

  • Sliced baby portobello mushrooms
  • Olive oil
  • Kosher salt
  • Ground black pepper
  • Torn parsley leaves for garnish

How to Roast Mushrooms in the Oven

Before you do anything, preheat your oven to 475°F and place a metal half-sheet pan on a rack positioned in the upper third of the oven.

This baking sheet will heat up while you’re preparing the mushrooms, so when you place them on it, they will cook evenly and get a nice sear. They will also cook faster!

Once the oven is preheated, prepare the mushrooms. All you do is toss them with the oil, salt, and pepper. Pour them onto the hot pan and spread them into an even layer with a heatproof spatula. They will start to sizzle as soon as they hit the pan.

Roast them for 15 minutes and then turn them over and cook them for another five minutes. Serve them hot with the parsley sprinkled over the top.

Main Dish Ideas

I love this recipe because the roasted mushrooms aren’t heavily seasoned, so they go with practically anything!

  • Spoon them over chicken breasts.
  • Serve them as a side dish for steak or pork chops.
  • Eat them straight from the pan – they’re that good!

Recipe Tips

The best tip is to wait to mix the mushrooms with the oil until the oven is preheated. If you do it earlier, the mushrooms will absorb the oil – so wait until the oven is hot.

Be sure to double-check that your oven rack is positioned correctly before the oven is hot. It’s a lot easier to adjust racks when they’re not burning hot!

I think these mushrooms are best served hot or warm, so once they’re out of the oven, transfer them to a serving dish and enjoy.

Oven Seared Mushrooms Recipe

Ingredients
 

  • 1 ½ pounds baby portobello mushrooms sliced
  • 3 tablespoons olive oil
  • ¾ tablespoon kosher salt
  • ½ tablespoon ground black pepper
  • Torn parsley leaves for garnish optional

Instructions

  • Place a rimmed, metal half-sheet pan on a rack situated in the upper third of the oven and pre-heat to 475°F.
  • Once at temperature, toss mushrooms, oil, salt and pepper together, and then pour onto the hot pan using a spoon or spatula to distribute the mushrooms evenly. It should be sizzling
  • Return the pan to the oven and roast for 15 minutes. Remove the pan from the oven and use a. metal or heatproof spatula to slide underneath the mushrooms and flip them over or at least stir them. Return pan to oven for another 5 minutes. Sprinkle the mushrooms with fresh herbs, if desired. These are best served hot or warm.

Mel’s Tips
  • We served these over chicken breasts and they went well together.
  • This would also pair very well with steak.
  • This recipe calls for 1 1/2 pounds of mushrooms, which is a lot. Feel free to half the recipe for a small family.
