    Quick and easy Skillet Lasagna recipe comes together in 30 minutes with only four steps. Weeknight dinner is served!

    Easy Skillet Lasagna is effortless to make, but it's packed full of flavor with Italian sausage, spinach, creamy ricotta, and gooey cheese.

    You won't believe something as comforting and flavorful as Skillet Lasagna can be so ridiculously easy to make!

    Where as other recipes combine cans of diced tomatoes, tomato sauce, and measured seasonings, Easy Skillet Lasagna keeps the rich, delicious flavor, but leaves out any extra work.

    Substituting a jar of quality marinara saves you steps, but doesn't sacrifice taste. In addition, using sweet Italian sausage links instead of ground beef adds even more seasoning.

    Those classic Italian flavors of fennel, oregano, and basil meld perfectly with creamy ricotta, freshly grated parmesan, and gooey mozzarella on top.

    How Can I Make Skillet Lasagna Vegetarian?

    1. Instead of using Italian sausage, substitute 2-3 cups of chopped veggies, such as mushrooms, onions, or peppers. Sauté in a splash of olive oil until tender, then season with salt and pepper.
    2. Add the marinara and water and bring to a boil. Add noodles, cover, and lower heat to a simmer. Cook for 15 minutes, or until noodles are al dente.
    3. Increase spinach to 6 cups and finish the recipe as written with ricotta, parmesan, and mozzarella.

    Voilà! Vegetarian Skillet Lasagna is born!

    If you would like to lower the calorie count, here are some healthy substitutions:

    • Substitute low fat cottage cheese for the ricotta
    • Swapping out turkey Italian sausage maintains the taste, but saves 168 calories per serving.

    • Reduce the mozzarella cheese topping to 1/2 cup

    Ingredients

    • 19 ounces sweet Italian sausage links, casings removed
    • 24 ounce jar marinara
    • 2 cups water
    • 9 uncooked lasagna noodles, broken into large pieces
    • 1/2 cup freshly grated Parmesan
    • 4 cups (about 2.5 ounces) fresh spinach, roughly chopped
    • 1/2 cup part-skim ricotta
    • 1 cup shredded mozzarella
    • fresh basil, for garnish

    Instructions

    • Spray a large skillet with non-stick cooking spray. Over medium-high heat cook sausage links with casings removed, breaking up meat with a spoon. Cook until brown and cooked through, about 5 minutes.
    • To the skillet add marinara and water. Bring to boil, then add uncooked lasagna noodles. Lower heat to a simmer, cover, and cook until lasagna noodles are cooked al dente, about 15 minutes.
    • Remove cover and add spinach. Stir spinach into sauce until it all wilts. Stir in parmesan cheese and ricotta.
    • Immediately top skillet lasagna with mozzarella. Cover with lid, turn off heat, and let sit for a few minutes, or until cheese is melted. Alternatively, if using an oven safe pan, place skillet under broiler for 1-2 minutes to melt cheese. Garnish with basil.
