This 4-step, 30 minute easy skillet lasagna recipe is so incredibly easy! It’s packed full of flavor with Italian sausage, spinach, creamy ricotta, and gooey cheese.

I’m sharing this easy skillet lasagna recipe so you can keep the rich, delicious flavor, but leave out any extra work. The classic Italian flavors of garlic, oregano, and basil meld perfectly with creamy ricotta, freshly grated parmesan, and gooey mozzarella on top.
If you’re looking for a super easy weeknight meal this is the perfect dinner recipe – one pot skillet lasagna is done so quick – save the classic lasagna for holidays and make this on the stovetop!

How to make Easy Skillet Lasagna
- Make this with meat by adding Sweet Italian sausage links (or ground sausage). Really, any ground meat (beef, ground turkey, even ground pork) will work.
- You can also make this a vegetarian lasagna skillet by adding more veggies and using vegetables tock.
- Use your favorite brand of pasta sauce – a jar of marinara sauce is just fine. Shortcuts are easy and make making dinner easy.
- Instead of cooking full sheets, you’ll use Uncooked lasagna noodles broken into smaller pieces as the pasta in the recipe.
- Normally lasagna has a ricotta mixture with freshly grated parmesan – that will be stirred into the sauce, along with fresh spinach.
- Add shredded mozzarella cheese and you’ve got a one pot dinner!
- Sprinkle with parsley or fresh basil for garnish.
Substitutions
- Instead of meat, add more veggies: mushrooms, zucchini, onions.
- Use vegetable stock or chicken broth in place of the water.
- Use gluten-free noodles.
- Use rotisserie chicken instead of sausage.
- You can substitute cottage cheese for ricotta cheese if you like.

Easy Skillet Lasagna
Ingredients
- 19 ounces sweet Italian sausage links casings removed
- 24 ounce jar marinara
- 2 cups water
- 9 uncooked lasagna noodles broken into large pieces
- ½ cup freshly grated Parmesan
- 4 cups (about 2.5 ounces) fresh spinach, roughly chopped
- ½ cup part-skim ricotta
- 1 cup shredded mozzarella
- fresh basil for garnish
Instructions
- Spray a large skillet with non-stick cooking spray. Over medium-high heat cook sausage links with casings removed, breaking up meat with a spoon. Cook until brown and cooked through, about 5 minutes.
- To the skillet add marinara and water. Bring to boil, then add uncooked lasagna noodles. Lower heat to a simmer, cover, and cook until lasagna noodles are cooked al dente, about 15 minutes.
- Remove cover and add spinach. Stir spinach into sauce until it all wilts. Stir in parmesan cheese and ricotta.
- Immediately top skillet lasagna with mozzarella. Cover with lid, turn off heat, and let sit for a few minutes, or until cheese is melted. Alternatively, if using an oven safe pan, place skillet under broiler for 1-2 minutes to melt cheese. Garnish with basil.
