I’m sharing this easy skillet lasagna recipe so you can keep the rich, delicious flavor, but leave out any extra work. 

The classic Italian flavors of fennel, oregano, and basil meld perfectly with creamy ricotta, freshly grated parmesan, and gooey mozzarella on top.

Ingredients

  • Sweet Italian sausage links- casings removed
  • Jar marinara- Use your favorite brand
  • Water- just 2 cups
  • Uncooked lasagna noodles– broken into large pieces
  • Freshly grated Parmesan– this makes the whole recipe come together 
  • Fresh spinach- roughly chopped
  • Part-skim ricotta- you can also use cottage cheese if you prefer 
  • Shredded mozzarella– for an extra creamy and cheesy dish
  • Fresh basil- for garnish 

 How to make skillet Lasagna

  1. Spray a large skillet with non-stick cooking spray. Over medium-high heat cook the Italian sausage links with casings removed, breaking up meat with a spoon. Cook until brown and cooked through, about 5 minutes.
  2. To the skillet add marinara and water. Bring to boil, then add uncooked lasagna noodles. Lower heat to a simmer, cover, and cook until lasagna noodles are cooked until slightly firm. For about 15 minutes.
  3. Remove cover and add spinach. Stir spinach into sauce until it all wilts. Stir in parmesan cheese and ricotta.
  4. Immediately top skillet lasagna with mozzarella. Cover with lid, turn off heat, and let it sit for a few minutes, or until cheese is melted. Garnish with basil.

It’s simple to make it vegetarian

  1. Instead of using Italian sausage, substitute 2-3 cups of chopped veggies, such as mushrooms, onions, or peppers. Sauté in a splash of olive oil until tender, then season with salt and pepper.
  2. Add the marinara and water and bring to a boil. Add noodles, cover, and lower heat to a simmer. Cook for 15 minutes, or until noodles are al dente.
  3. Increase spinach to 6 cups and finish the recipe as written with ricotta, parmesan, and mozzarella.

  • 19 ounces sweet Italian sausage links casings removed
  • 24 ounce jar marinara
  • 2 cups water
  • 9 uncooked lasagna noodles broken into large pieces
  • 1/2 cup freshly grated Parmesan
  • 4 cups about 2.5 ounces fresh spinach, roughly chopped
  • 1/2 cup part-skim ricotta
  • 1 cup shredded mozzarella
  • fresh basil for garnish

Instructions
