- Sweet Italian sausage links- casings removed
- Jar marinara- Use your favorite brand
- Water- just 2 cups
- Uncooked lasagna noodles– broken into large pieces
- Freshly grated Parmesan– this makes the whole recipe come together
- Fresh spinach- roughly chopped
- Part-skim ricotta- you can also use cottage cheese if you prefer
- Shredded mozzarella– for an extra creamy and cheesy dish
- Fresh basil- for garnish
How to make skillet Lasagna
- Spray a large skillet with non-stick cooking spray. Over medium-high heat cook the Italian sausage links with casings removed, breaking up meat with a spoon. Cook until brown and cooked through, about 5 minutes.
- To the skillet add marinara and water. Bring to boil, then add uncooked lasagna noodles. Lower heat to a simmer, cover, and cook until lasagna noodles are cooked until slightly firm. For about 15 minutes.
- Remove cover and add spinach. Stir spinach into sauce until it all wilts. Stir in parmesan cheese and ricotta.
- Immediately top skillet lasagna with mozzarella. Cover with lid, turn off heat, and let it sit for a few minutes, or until cheese is melted. Garnish with basil.
