Simple Baked Potato Casserole

I’m a huge fan of baked potatoes, but not really about the process of making them. The steaming, the poking, the waiting for it to cool, and then trying to find the right balance of the toppings for each bite are all a bit much!

But once I realized that I could make this simple potato casserole where I would get a loaded baked potato flavor with every bite, I was hooked and never looked back!

The best part about making casseroles is that they’re great any time of the year. They can be hearty and comfort food for winter or a great side dish during summer. There’s no wrong time or way to eat this dish!

Ingredients Needed To Make Baked Potato Casserole

This recipe is the perfect way to combine potatoes, cheese, and bacon – all of my favorite things!

  • Bacon
  • Russet Potatoes
  • Cream cheese
  • Cheddar cheese
  • Yellow onion
  • Salt and pepper

How to make this Baked Potato Casserole

  • Preheat the oven to 425°F.  Spray a 13 x 9-inch casserole dish with cooking spray
  • In a large skillet, cook bacon over medium heat, flipping once. About 5 minutes per side for crispy. Remove bacon and place on paper towels, and pat them to dry them off. Leave the leftover bacon grease in the skillet.
  • Add onions to the bacon grease and let them cook on medium heat until they soften and become transparent. Place onions on a plate.
  • Add potatoes to the casserole dish in a single layer. Pour the remaining bacon grease over the potatoes. Salt and pepper to taste. Cook in the oven until they soften and start to brown. About 45-60 minutes.
  • Add cream cheese, 1 cup grated cheddar, and onions to a medium-sized mixing bowl. Combine well. When the potatoes are done cooking, dollop the cream cheese mixture over the potatoes. Sprinkle the rest of the cheese over the top. Cook until the cheese is melted and the potatoes are cooked through. About 12-15 minutes.
  • Sprinkle bacon over the top and serve!!

Tips

If you want to save on some prep time, you can buy already cooked bacon or bacon pieces and just add those into the recipe.

You can also use any type of potatoes that you like! I think that red potatoes are great for this dish, too!

Do I have to peel the potatoes for this casserole recipe?

No, you don’t have to peel the potatoes. I would say that it’s a personal choice. I actually LIKE eating potato skins, so I leave them on. (just make sure that you wash them really well!)

What other ingredients can I add?

This is where this potato casserole can be a lot of fun. If you like spicy, add in diced jalapenos or chili powder.

You can also add in fresh cilantro, fresh onions, and fresh chives, too.

Any toppings that you would want to have on a potato add them to this dish.

Can I freeze leftovers?

This dish is best served hot and warm – but it can be frozen. Just let it cool down completely and then add it to a freezer-safe container.

To unthaw, move to the refrigerator and give it a few hours. You can then reheat in the microwave and enjoy. (I always add some freshly shredded cheese on top when I reheat)

How do I know the casserole is done baking?

Before eating, you want to make sure that the casserole is cooked all the way through! The best way to do this is to test the potatoes since they’re a major part of the dish.

Once the casserole is done baking, use a fork and poke into the potatoes in the dish. They should be fork-tender and not give any resistance at all.

If they are, that is your indication that the casserole is done baking and ready to eat!

  • 7 slices bacon cooked crisp and chopped into ½ inch pieces
  • 2 pounds. Russet Potatoes washed and cut into 1-inch cubes (3 to 4 potatoes)
  • 6 ounces cream cheese softened
  • 2 cups cheddar cheese grated and divided
  • 1 yellow onion sliced thin
  • Salt and pepper to taste
  • Cooking spray
