This Ground Turkey Stir Fry Recipe is an easy dinner recipe with lean ground turkey, vegetables, cashews, and a sweet and savory stir fry sauce. Serve it all on its own or over rice for a great weeknight dinner.

Turkey Stir Fry

We enjoy making stir fry recipes because they’re easy, and there are many ways to switch up the meat and vegetables. It’s one of our favorite ways to use leftover veggies in the fridge and it brings in so many great flavors.

For this recipe, I combine ground turkey with broccoli, onions, and mushrooms for an easy stir fry dinner. Some cashews for crunch and an easy stir fry sauce pull it all together. This recipe is so easy to make because everything can be thrown in a skillet!

Ingredients Needed

  • Soy Sauce: I prefer to use low sodium, but you can choose your favorite kind.
  • Ginger: You can use fresh ginger that’s grated or powdered
  • Cornstarch: This thickens the sauce, and keeps it gluten-free.
  • Brown Sugar: This is the perfect ingredient to sweeten up the sauce!
  • Turkey: We use ground turkey for so many recipes, including this great one!
  • Broccoli Florets: You can use any kind of broccoli you like best!
  • Mushrooms: Sliced white mushrooms
  • Onion: I like to use yellow onion but white or sweet onion is fine too.
  • Cashews for crunch, like I do with cashew chicken

Variations

Stir fry recipes are perfect to use up pantry staples. You can use any vegetable you want – skip the broccoli and use green beans or asparagus, or you can mix and match. You can use your favorite stir fry vegetables like chopped bell peppers, baby corn, snap peas, carrots, or green onions.

Sugar free brown sugar (i.e. Swerve) can be used or swap an equal amount of honey.

We love using ground turkey but you can use ground chicken or ground pork or any other lean protein.

Add some red pepper flakes for a bit of heat, or some sriracha if you like spicy.

Almonds or peanuts would work well instead of cashews (or your favorite nuts)

How to Make Ground Turkey Stir Fry

  • Prepare sauce by stirring together the water, soy sauce, ginger, cornstarch and brown sugar.
  • Heat cooking spray in a large skillet over medium heat. Cook ground turkey until no longer pink breaking into small pieces. About 4-5 minutes. Drain and remove from skillet and put on a plate.
  • In the same skillet add olive oil. Then add broccoli and onions. Once onions start to soften add mushrooms. When mushrooms start to soften, 3-5 minutes. Add ground turkey and cashews into the skillet for one minute. Then add sauce to combine with all ingredients. Heat for another 2 minutes. Serve.

  • 1 pound ground turkey

  • 8 ounces white mushrooms sliced

Sauce

  • ½ cup water
  • ¼ cup low sodium soy sauce
  • 1 teaspoon ground ginger
  • 2 tablespoons cornstarch
  • 2 tablespoons brown sugar

    Yummy! I needed to use up my cabbage and carrots but I had no chicken to use (as part of my typical stir fry), which is when I found your recipe.
