Roast Beef Sliders are one of my favorite easy slider recipes with Hawaiian rolls, deli roast beef, balsamic onions, and white cheddar cheese. These are leveled up French dip sliders and they’re perfect as an appetizer or even as a simple dinner recipe.

I love easy slider recipes, and this roast beef sliders recipe is a really simple one. A few ingredients, a few minutes in the oven, and you get a batch of hot and cheesy sliders that are great for parties or easy dinners.

I combine sliced roast beef with red onions cooked with balsamic vinegar for this recipe. The vinegar adds a nice tang that complements the melted cheese and roast beef.

Hawaiian rolls make the best sliders, and I love the flavor. It’s a little sweet, which goes great with the balsamic and savory beef, and they’re nice and soft. These roast beef sliders are so delicious warm from the oven.

Pair these Roast Beef Sliders with other appetizers for a party or game day. We also make them for dinner with fries, chips, or a simple green salad on the side. I think you’ll really enjoy them!

How to make Roast Beef Sliders

  1. You’ll need roast beef deli meat – use your favorite brand.
  2. I use provolone cheese but you can also use Swiss cheese. You need a melty cheese so it gets all gooey.
  3. I always use Hawaiian sweet rolls as slider buns – they’re soft and perfect. They’re usually stuck together to slice the sheet with a serrated knife.
  4. Caramelized onions with balsamic vinegar are the perfect addition to classic French dips – you can even use Worcestershire sauce if you prefer.
  5. You’ll melt butter in a small bowl and brush it over the tops of the rolls. Sometimes we add Italian seasoning, garlic powder, and onion powder but you can also use everything bagel seasoning for the top, or poppy seeds. Brush the butter mixture over the rolls.
  6. Tent a 9 x 13-inch baking dish with aluminum foil and bake, removing the foil during the last few minutes of baking.

Storing Leftover Roast Beef Sliders

  • Store in an airtight container in the fridge.
  • Reheat in the microwave or air fryer.

Recipe Tips

  • If you want the sliders to hold together better, stick a toothpick in each one. This makes it easy to serve them for parties, too.
  • I like a lot of balsamic vinegar, but if you want to cut back on that flavor, reduce the amount of vinegar by half.
  • Instead of red onions, you can use white or yellow onions.
  • Any shredded cheese will work for this recipe. We like the strong flavor from white cheddar, but pepper jack, gouda, gruyere, provolone, or other cheddar cheese work great, too.
  • Feel free to add some dijon mustard on the bread if you want and serve with a side of horseradish for dipping.

Roast Beef Sliders Recipe

Roast Beef Sliders are an easy slider recipe that only requires a few ingredients and a few minutes of cooking time!

Ingredients
 

  • 8 Hawaiian rolls cut in half so you have a top and bottom bun
  • ½ large red onion sliced thin
  • 1 tablespoon balsamic vinegar
  • 1 pound deli roast beef sliced
  • 1 ½ cups sharp white cheddar cheese grated
  • 2 tablespoons butter melted
  • 1 teaspoon Italian seasoning
  • Cooking spray

Instructions

  • Preheat oven to 375°F and line a large baking sheet with parchment paper
  • Use cooking spray on a large skillet and bring to medium heat. Add onions and cook while stirring often until they start to soften. Combine 1 tablespoon balsamic vinegar with the onions. Let cook for 2 minutes and then remove from heat.
  • Place the bottoms of the buns on the baking sheet. Divide ingredients into 8 equal parts. Add roast beef (folded so it fits the bun), followed by onions and top with cheese.
  • Stir Italian seasoning into melted butter. Brush melted butter on the top portion of each bun and then place the top of the bun on top of each slider.
  • Bake for 15-18 minutes or until cheese is melted and ingredients are hot. Serve!

Recipe Notes

• We used toothpicks to hold the sandwiches together better.
• Use whatever cheese you like. We like the sharp taste of the white cheddar
• If you have leftover roast beef you can use that as well.
• If you want a lighter taste, cut the balsamic in half.
