What is Crostini?

Crostini means “toast” in Italian, but it’s so much more than just plain toast. Sliced bread, in this case, a baguette, is brushed with oil, dressed up with toppings, and then toasted in the oven. The variations are really endless.

  • Large thin baguette
  • Chopped fresh basil leaves
  • Vegetable oil
  • Chopped Roma tomatoes
  • Capers
  • Sliced mozzarella cheese
  • Salt and black pepper

How to Make Crostini

First, slice the crostini bread. Use a serrated knife to cut ½” pieces on an angle. Slicing the bread at an angle will make pieces that have a bigger surface for the toppings.

Place the slices in a single layer on a large baking sheet. Brush the tops with oil.

In a medium bowl, combine the tomatoes, capers, basil, salt, and pepper. Spoon half of the topping on the crostini baguette slices. Add a piece of cheese on each and then spoon the rest of the topping over the cheese.

Bake the crostini at 375°F for eight to ten minutes or until the cheese is melted. Serve them hot from the oven.

Recipe Variations

There are so many ways to change up this easy crostini recipe if you want different flavors. Here are some variations you might like to try.

  • Bread: A thin baguette works well because of the size, but you can also try other bread types. Depending on how wide the loaf is, slice it into pieces that are easy to eat in a few bites. Italian bread or a sourdough loaf will work well.
  • Tomatoes: Instead of tomatoes, try roasted red peppers or sun-dried tomatoes.
  • Herbs: Fresh parsley, thyme, or finely chopped fresh rosemary are great. If you don’t have fresh herbs on hand, you can use dried herbs. Just reduce the amount since they have a stronger flavor.
  • Cheese: I like good melting cheese, so try Provolone or Havarti cheese if you want to change it up. You could also sprinkle some freshly grated Parmesan cheese over the top.

Ingredients
 

  • 1 large thin baguette Sliced about 1/2 inch thick on an angle
  • 3 tablespoons fresh basil leaves chopped
  • 2 tablespoons vegetable oil
  • 2 Roma tomatoes chopped
  • 1 tablespoon capers
  • 1 slice mozzarella cheese for each slice of bread 12-15
  • Salt and pepper to taste

Instructions

  • Preheat oven to 375°F.
  • Place bread slices on a large cookie sheet. Brush oil on the bread slices.
  • In a medium sized bowl, Mix the tomato, capers, basil, salt and pepper together. Put half of the tomato mixture on the bread slices. Then add the cheese slices and place the other half of the tomato mixture on top of the cheese.
  • Cook in oven for 8-10 minutes or until cheese is fully melted. Serve!!
