We like to make summer fruit salad because they’re light, refreshing, easy to transport, and the variations are endless. For this one, we pair red watermelon with blueberries for a red and blue theme.

How to Make Watermelon Fruit Salad

  1. Start by slicing a seedless watermelon into 1-inch slices and then cutting shapes with a star cookie cutter.
  2. If you’re not making this for July 4, then just cut the watermelon into cubes.
  3. Toss the watermelon with fresh blueberries.
  4. Make the simple dressing with fresh lime juice and honey, adding more or less of each to taste, then drizzle it over the fruit. You can garnish with fresh mint.

Variations

  • Keep the watermelon so that you can cut it into shapes or bite-sized pieces.
  • Add other fruit that you like or different types of berries that fit the theme, like strawberries, cherries, or fresh raspberries.
  • Try adding some fresh mint leaves to the dressing or swap the lime juice for lemon juice. You can also use agave in place of honey.
  • Any melons can be used in place of the watermelon – anything you can cut with a cookie cutter or melon baller, like cantaloupe or honeydew melons. Even pineapple or mango would work.

There’s nothing better than a cold and refreshing salad during the summer, and this 4th of July Fruit Salad is a great one to try.

Ingredients
 

Fruit:

  • 1 Medium Watermelon ours was 8.5 pounds
  • 1 (9 ounce) package of blueberries

Honey Lime Dressing:

  • 2 tablespoons honey
  • Juice of 1 lime

Instructions

  • Cut watermelon into rings about 1” thick. Note that we used a star cookie cutter and we made our rings about the same width which was close to 1”). If you don’t have a star cookie cutter you can just cut it into pieces or use some other cute cutter.
  • Make the dressing by adding the honey and lime juice in a small bowl and stir. Taste and if you want more sweetness add some more honey and if you want more. Citrus, add a tiny bit more lime. We wanted sweetness and added ½ tablespoon more honey.
  • Add the watermelon to a large serving bowl. Take the blueberries and put them in the honey lime dressing. Just try to get all of them covered with the dressing. Add the blueberries to the serving bowl with the watermelon.
  • Gently mix the watermelon and blueberries together. Do not smash the fruit. The dressing on the blueberries will transfer lightly to the watermelon. Serve and enjoy!!

Recipe Notes

  • This is a very simple salad, but you can add other fruit as you see fit. Maybe some apple, blackberries, strawberries or anything that fits the theme.
  • You don’t need the dressing to have a great fruit salad. We just added it for a little change in flavor.
