I’m always trying out new recipes using ground turkey because as much as I like beef, turkey is just a better choice for us, and I like that it pairs with lots of ingredients. This ground turkey butternut squash recipe is easy and delicious, plus it is WW-friendly.

Recipe Overview

Butternut squash is a little sweet with a soft texture that pairs great with the turkey. You can buy a whole squash and cube it yourself or save time and buy the cubed squash. It’s usually in the produce department with the other prepped vegetables.

I also add some onions and bell peppers – they add color and flavor that goes well with the squash. The turkey and veggies are seasoned with some cumin and salt, and pepper.

What pulls this dish together is the Greek yogurt sauce. You add it at the end, giving the dish some creamy richness without a lot of extra fat and calories.

This is a quick recipe ready in about 30 minutes, making it an excellent choice for weeknight dinners.

Ingredients

  • Cubed butternut squash
  • Cooking spray
  • 99% fat-free ground turkey
  • Chopped yellow onion
  • Chopped bell peppers – I use red or yellow ones.
  • Cumin
  • Salt and pepper
  • Fat-free Greek yogurt
  • Finely chopped fresh parsley

How to Make Ground Turkey Butternut Squash

Bring water to a boil in a large saucepan. Season the water with salt, and then add the butternut squash. Boil it for five to six minutes or until it’s fork-tender.

Lightly coat a skillet with cooking spray and heat it over medium heat. Once it’s hot, add the ground turkey and break it apart as it cooks. Once it’s cooked through, transfer the turkey to a plate.

Spray the skillet with more cooking spray and heat it over medium-high heat. Add the peppers and onions and cook them for five to seven minutes or until they are softened. Add the cooked turkey, butternut squash, cumin, salt, and pepper, and stir to combine.

After a couple of minutes, add the yogurt and stir. Cook it for one minute longer and then transfer to plates for serving. Garnish each serving with parsley.

Weight Watchers Turkey Butternut Squash Sauté recipe is perfect for when you are looking for a dinner on the lighter side. It’s so delicious and healthy!

Ingredients
 

  • 1 pound butternut squash peeled and cut into ¼ cubes (we used uncooked store bought that was already cubed)
  • 1 pound 99% fat free ground turkey
  • 1 small yellow onion chopped
  • 2 bell pepper red or yellow, chopped
  • ½ cup fat free Greek yogurt
  • 2 tablespoons fresh parsley finely chopped
  • ½ teaspoon cumin
  • ½ teaspoon salt or to taste
  • ¼ teaspoon ground pepper or to taste
  • Cooking spray

Instructions

  • In a large saucepan boil water with salt. Add squash for 5-6 minutes until it is fork tender.
  • Spray skillet lightly with cooking spray and pre-heat to medium heat. Add ground turkey and break into small pieces. Cook until the meat is no longer pink (7-10 minutes). Remove skillet from heat and set ground turkey aside on a plate.
  • Coat the same skillet with cooking spray and place over medium high heat burner. Once heated add in bell pepper and onion. Let cook for 5-7 minutes stirring often until they are softened and lightly browned. Stir in the cooked turkey and add in cumin, salt and pepper and combine well. Let heat up for 2-3 minutes. Add yogurt and combine well. Let heat for 1 minute and remove from heat. Add more salt and pepper to taste (optional). Serve and add parsley for garnish.

Recipe Notes

If you are not doing weight watchers you can use 93% fat free turkey or even ground beef.
