We love taco night but it can get a little boring sometimes so I’m always looking for a way to put a fun spin on it and this taco skillet meal is an easy way to do it.

It’s basically the same ingredients for ground turkey tacos but cooked up in a skillet. All of the meat, cheese, onions and peppers cook together and then you can serve it up a bunch of different ways. If you’re tired of the same old tacos you have to give this one a try.

You Will Love this One Pot Taco Dinner!

Easy to prep, cook and clean-up! I love easy one pot meals like this one – they’re the best right? Here’s what you’ll need to make it:

  • Olive oil
  • Ground turkey (you could also use ground beef!)
  • Chopped onion
  • Chopped bell pepper
  • Minced garlic
  • Taco seasoning
  • Shredded cheddar cheese or Monterey jack cheese (or a combo!)
  • Chopped tomato
  • Fresh cilantro
  • Tortilla chips

You can definitely put your own spin on this recipe. Use yellow, white or red onions. Add some chopped jalapeno for a little spice or switch up the cheese – any kind of cheddar, Colby, pepper jack or other shredded Mexican-style cheese will work.

Make this Cheesy Taco Skillet in Just Three Steps

Brown the ground turkey: Heat the oil in a skillet over medium heat. Add the ground turkey, break it up, and cook it until it’s no longer pink. Drain the liquid, add the taco seasoning and stir to combine it with the meat. Remove the meat from the pan and set it aside.

Cook the veggies: In the same pan, cook the onion and garlic for two minutes. Add the peppers and cook for another couple of minutes. Add the chopped tomato and cook it with the other veggies for about a minute.

Bring it all together: Add the ground turkey back to the skillet and sprinkle the cheese over the top. Cover until the cheese melts and then add the chopped cilantro. Crumble the tortilla chips over the top of each serving.

Different Ways to Serve this Easy Taco Dinner

Sometimes I skip the crumbled chips and serve this taco skillet like a dip! Everyone can grab some tortilla chips and scoop up the cheesy taco goodness.

I’ve also scooped it into taco shells for a super easy taco dinner. Add some shredded lettuce and sour cream to finish them off.

If you love a little heat, add your favorite hot sauce or salsa – it’s so good!

I love the ground turkey because it’s nice and lean, but I’ve also made this recipe with ground beef and skirt steak before.

This Recipe is Great for Meal Prep, Too!

You can make all of it ahead, portion it out to single-servings and have some easy lunches and dinners on hand for busy weeks.

Just cook the recipe as directed, but don’t add the cheese. Instead, let it cool, place it in your meal prep containers and sprinkle the cheese over the top. That way, when you reheat it, the cheese will be freshly melted and delicious.

This easy taco skillet will keep well in the refrigerator for three to four days!

This Taco Skillet is everything you love about tacos, but in one pan for an easy dinner and even easier clean up! It’s a nice change from the usual taco night.

Ingredients
 

  • 1 lb ground turkey
  • 1 small chopped onion
  • 1 bell chopped pepper
  • 3 cloves of garlic
  • 1 packet of taco seasoning
  • 1 cup cheddar cheese or Monterey Jack
  • A few tortilla chips
  • 1 chopped tomato
  • 3 tablespoons cilantro
  • 2 tablespoons olive oil

Instructions

  • Add oil to skillet and brown the ground turkey over medium heat until all the pink is gone. Drain the liquid from the skillet. Add taco seasoning and mix well. Remove ground turkey from skillet and set to the side.
  • Over medium heat add onion and garlic for 2 minutes. Next add bell pepper for a couple minutes. Then add in the tomato for 1 minute.
  • Add ground turkey back into the skillet and sprinkle the cheese on top. Cover skillet and let cheeses melt. Once melted add cilantro and serve. Once you have the portions on the plate crumble tortilla chips on top

Serving Suggestions: Serve in a taco shell, add hot sauce to spice it up, serve over a bed of rice or try it with ground beef or skirt steak.
