This BBQ Chicken Pasta Salad is a great main dish since it has the protein in it, but it’s also a perfect side dish for BBQ’s, cookouts and potlucks.

Ingredients
 

Salad Ingredients:

  • ½ pound Farfalle Pasta cooked per package instructions
  • 2 cups chicken shredded (we used a rotisserie chicken)
  • 1 cup red onion diced
  • 1 cup cherry tomatoes halved
  • 1 cup corn frozen kernels thawed
  • BBQ Sauce dressing below
  • Cilantro for garnish

Sauce ingredients:

  • ¼ cup barbecue sauce use one you like (adjust amount after tasting)
  • 2 garlic cloves crushed
  • ¼ teaspoon chili powder
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • Juice from 1 Lime adjust after tasting
  • Salt and pepper to taste

Instructions

  • Make the sauce by adding all the ingredients in a sealable jar. Once added shake well.
  • In a large bowl combine the cooled pasta, chicken, onion, corn and tomatoes. Pour sauce over the pasta and toss until combined.

Recipe Notes

  • Serve within two days and keep covered with plastic wrap in the refrigerator.
  • You can use other pastas with this like penne, fusilli and rotini.
  • Since the dressing has both lime juice and barbecue sauce you should adjust according to your taste. You may want it a little sweeter so add more barbecue sauce or you may want more citrus so add a little more lime juice or some lime zest.

    Thanks for this!! Made it for a takeaway meal and it was a hit! Added extra BBQ sauce and switched out the tomatoes for red peppers. Also added a cup of grated cheddar. This will stay in my rotation of summer salads.
