Baked Brie is an impressive party appetizer that is easy to make. A wheel of brie cheese is topped with caramelized onions and wrapped in dough and baked. The dough turns golden and when you cut into it, you get oozy melted cheese that’s rich and decadent.

This baked brie with caramelized onions is easy to make and great for holiday parties or any time you want an elegant and fancy appetizer. The combination of the warm melted cheese with the sweet caramelized onions and the golden baked dough is so good. It’s one of my favorite appetizers.

If you’ve never had it, brie is a soft cheese that melts really well. When you encase it in dough and bake it, it turns ooey-gooey. It’s great for spreading on sliced bread or serve it with vegetable sticks for dipping. There are all kinds of baked brie cheese recipes and this is my personal favorite.

What takes this recipe over the top is the caramelized onions. Onions are cooked until they turn soft and golden. It draws out their sweetness making them the perfect complement to the rich cheese. We like to serve the wrapped brie with baguette slices.

Ingredients

  • Sliced yellow onion
  • Softened butter cut into small cubes
  • Kosher salt
  • Refrigerated crescent roll dough
  • Brie cheese wheel
  • Melted butter

How to Bake Brie

Melt the softened butter in a large skillet or pan over medium heat. Add the sliced onions and stir to coat them in the butter.

Stir the onions a few times. Once they’ve cooked for about 10 minutes, they should be softened. At this point, lower the heat and sauté them for 20 to 25 minutes or until they are golden and soft.

Take the onion mixture out of the pan and set them aside while you assemble the brie.

Preheat the oven to 375°F and line a large baking sheet with parchment paper.

Use a butter knife to scrape off the white rind from the brie. The rind is edible, so if you can’t remove all of it, it’s fine. You want to scrape most of it from the top and sides. Do this carefully so you don’t cut of the cheese part.

Unroll the crescent dough and place it flat on a cutting board. Divide it into two squares and then press the perforations to seal them. 

Place one of the squares on the prepared baking sheet. Place the cheese in the center and then spoon the caramelized onions over the top of the brie.

Gently pull the dough up to the top of the cheese. It won’t cover the top, but you want to pull it up so the bottom of the cheese is completely covered and the edges meet the top of the cheese. Place the other dough square over the top of the cheese and then press the edges with the edges from the bottom piece to seal the brie inside the dough.

When you seal the dough, be careful not to tear it. You want the cheese completely encased, otherwise, it will leak out when it’s baked. 

Brush the top of the dough with the melted butter and then poke a few holes in the top with a fork to allow steam to escape while the cheese bakes.

Bake the caramelized onion brie for 15 to 20 minutes or until the dough is golden brown.

What to Serve with Baked Brie

  • Sliced French baguette or crostini
  • Crackers
  • Carrot sticks and celery sticks for dipping
  • Fresh fruit like sliced apples and pears are great, too.

Recipe Tips

As mentioned, the rind on the cheese is edible. I like to scrape it off because we serve baked brie like a dip. Once it’s baked, we cut into the top, and then everyone can dip or spread it on crackers and bread. If you leave the top rind on, it will cover up the melted cheese. 

If you don’t want to remove the rind, I recommend slicing the baked brie for serving. You can place it on a serving platter with a butter knife and your guests can slice wedges of the cheese and dough.

You can caramelize the onions a day in advance to make this recipe even easier. Cook them as instructed and then refrigerate them until you are ready to bake the brie.

I like using crescent dough for this recipe, but you can also use thawed puff pastry sheets, but you may need to adjust the baking time. This is such a great appetizer – it looks fancy and complicated, but it’s actually pretty easy to make. If you want to impress your guests, be sure to add it to your menu. Ingredients
 

Caramelized Onions

  • 1 large yellow onion sliced
  • 2 tablespoons butter softened and cut into smaller pieces
  • ½ teaspoon kosher salt

Baked Brie

  • 1 8- ounce tube of crescent roll dough
  • 1 8- ounce wheel of brie cheese with the rind
  • 1 tablespoon butter melted
  • 1 thin long baguette sliced for serving

Instructions

Caramelized Onions

  • In a large skillet over medium heat, melt the butter. Add onions and combine them with the butter. Stir every 5 minutes or so.
  • At first the onions will start to soften. After about 10 minutes they should be soft and maybe even starting to brown. You don’t want to burn the onions so at this point I turn the heat down a little bit.
  • Continue cooking until tender and browned, about 20-25 minutes longer.
  • Remove onions from the heat and set to the side.

Baked Brie

  • Preheat oven to 375°F. Line a large baking sheet with parchment paper.
  • Unwrap Brie and using a butter knife, carefully scrape off as much of the white rind as you can without cutting the brie.
  • Unroll the crescent roll dough on a cutting board into a flat sheet. Divide into two squares which will be 4 triangles each. Press all the perforation seams together as best you can. Put one of the squares in the middle of the baking sheet. Place the brie in the middle of the dough.
  • Add the caramelized onions on top of the brie.
  • Fold up the corners of the lower dough sheet as best you can. Put the second dough sheet on top so you fully cover the brie. Now pinch the lower and upper dough seams together as best you can. If you have too many openings in the dough, the cheese will leak out. Brush melted butter on the top of the dough.
  • Use a fork and poke a few holes in the top. Bake for 15-20 minutes the dough is golden brown. Serve with sliced baguette pieces.
