This drink is delicious and so easy to make with homemade mint simple syrup and then you add bubbles with club soda or sparkling water. It’s going to become a favorite recipe!
Ingredient Notes
- Mint Simple Syrup – you have options here. I think you should make the mint syrup from scratch – it’s really easy. But if you have plain simple syrup you could muddle some mint into it and then strain it.
- Grapefruit Juice – this is sold in the refrigerator aisle usually, and sometimes they have shelf stable ones in the juice aisle. We also use grapefruit juice in our Salty Puppy Mocktail!
- Bubbles – Club soda or sparkling water are best, or lemon-lime soda or ginger-ale if you prefer.

How to make Grapefruit Coolers
- You’ll make the base of the drink and chill it, then add the club soda when ready to serve. In that way it’s the best make ahead recipe.
- Homemade simple syrup is as easy as cooking equal parts sugar and water and infusing it with fresh herbs.
- Use fresh lemon juice for best results.
- Serve with club soda – only add this once poured or when serving so it doesn’t go flat.
- Garnish with lemon

- You can do this same thing with ANY juice – this would also be great with lemonade or limeade.
Grapefruit Cooler Recipe

Ingredients
- 2 oz mint simple syrup
- 16 oz grapefruit juice
- 6 oz lemon juice
- 12 ounces Club Soda or sparkling water
Instructions
- Add simple syrup into a pitcher and add grapefruit juice and lemon juice.
- Serve cold over ice; top with sparkling water. Garnish with lemon.
Recipe Notes
Add up to another ounce or more of simple syrup to taste.
To make simple syrup: cook 1 cup sugar and 1 cup water in a small saucepan over medium heat. Add mint and cook until just simmering, cool then strain. Store in fridge.
