Strawberry Shortcake Cupcakes start with a vanilla cupcake and are filled with fresh strawberries and topped with whipped cream.

These are a fun cupcake version of the traditional strawberry shortcake recipe and everyone loves them!

Whenever I think of Strawberry Shortcake, I think of two things:

  1. The doll and TV show. I had all the dolls. I still remember what Strawberry Shortcake smelled like!
  2. Those strange little cake cups in the produce section of the grocery store. We used to eat them every summer, and they tasted like Twinkies without cream.

I’m going to change your perception of Strawberry Shortcake by sharing this recipe for a cupcake version. The cake is so much better than those packaged ones (even if you use a cake mix!) Regardless you still have to add your own berries and whipped cream. Filling cupcakes with strawberries and toping with a fresh whipped cream is so good, no one will care if your cupcakes came from a box.

(But – if you want a from scratch cake recipe, there is a link above the recipe!)

There are so many ways to make strawberry shortcake. You can make them on a cake, like those ones in the store. Or you can make them more traditionally, and serve them on a biscuit. In my mind, strawberry shortcake is such an easy recipe that’s adaptable to what you like and what you have on hand.

An easy Strawberry Shortcake Cupcake combines the same components of strawberry shortcake: cake, berries, and whipped cream, into a fun little cupcake.

I love cupcakes for parties because they’re so much easier to eat. They’re a fork and plate free food, which makes them easier to eat than a traditional shortcake. These are even easier because they’re made with cake mix.

Really, you only need a few ingredients to make this recipe: cupcakes, berries, and whipped cream. The assembly is easy and the eating is even better.

  1. I’m going to make these for a baby shower this weekend- do you think these would taste/turn out just as well if I baked the strawberries in the batter? Just trying to find a way to save a little time.
