We love brie cheese, and it’s so good when it’s baked. This recipe reminds me of baked brie, an appetizer where you wrap the entire wheel of cheese in puff pastry and bake it. It can get a little messy when you slice it, so I like to make these baked brie bites to keep it easy for serving. They’re the same idea but bite-sized.
Once you know how to make this baked brie bite recipe, you can switch up the preserves and make all different flavors. It works well with any fruit preserves, so feel free to experiment! I think you’ll love the flavors and how easy they are to make.

FAQ
What can you use instead of preserves?
Any fruit jam you like will work, or try using a compote or cranberry sauce. You can also skip the preserves and drizzle honey over the warm brie bites with some finely chopped nuts for a bit of crunch.
How do you thaw puff pastry?
The puff pastry sheets should be thawed in the refrigerator. Don’t take them out until you are ready to cut the dough and assemble the bites. If the pastry warms up, your brie bites won’t be as flaky.
Can you make them ahead?
You can assemble them a few hours in advance. Place everything in the muffin pan, and then cover it with plastic wrap. Keep it in the refrigerator until you are ready to bake them. If they are cold, you may need to add a minute or two to the baking time.
How long do leftovers keep?
If you have any leftovers, keep them in the refrigerator. The dough will soften, but they are delicious if you warm them up.
For your next party or holiday celebration, I hope you give these easy peach brie bites a try. They look elegant, taste amazing, and are so easy – the perfect party appetizer. Enjoy!
