This is an excellent recipe if you’re not a fan of eggs or if you’re hosting breakfast for family and friends and you’re not sure if there are egg allergies. It’s loaded with sausage, hashbrowns, and cheese – you won’t even miss the eggs!

Plus, you can make it ahead to make things easy, although there’s nothing complicated about it. You only need a handful of ingredients and the prep time is pretty quick.

  • Cooking spray

How to Make a Breakfast Casserole with No Eggs

Coat a large skillet with cooking spray and heat it over medium heat. Add the onions, cook them for two minutes and then add the sausage.

Cook the sausage and onions until the sausage is no longer pink. Drain the fat out of the pan and transfer the onions to a large mixing bowl.

Cook the hashbrowns in the same skillet, following the package instructions. Once they are cooked, add them to the sausage mixture in the bowl. Add ½ of the cheese and mix well to combine and season with salt and pepper.

Transfer the mixture to a 9×13” baking dish. Sprinkle the rest of the cheese over the top and bake the casserole for 8 to 10 minutes at 350°F or until it’s hot and the cheese is melted.

Make-Ahead Tips

Want a make-ahead no egg breakfast casserole? This recipe is great if you want breakfast ready to go in advance.

Make the recipe as instructed and assemble the casserole. Once it’s in the baking dish, cover it tightly with plastic wrap.

Refrigerate it overnight and then uncover it and bake it the following day as instructed. You may need to add a few minutes to the baking time if it goes in the oven cold.

Recipe Variations

This is a great dish because you can create different no egg breakfast casserole recipes just by switching up some of the ingredients.

Hashbrowns: We like to use Southern-style hashbrowns, which are small diced potatoes that are seasoned. Any hashbrowns you like will work fine, so feel free to pick your favorite.

Sausage: You can use sausage links for this recipe, but you will need to remove the casings. There are all kinds of sausage you can try to change the flavor – even spicy ground sausage if you want to add some heat.

Veggies: Add some chopped bell peppers, mushrooms, or broccoli when you cook the onions and sausage if you want to add different textures and flavors.

Bacon: You can omit the bacon and use an extra ½ pound to one pound of sausage instead.

Ingredients
 

  • 1 pound ground sausage
  • 8 slices bacon cooked and chopped
  • 32- ounce bag hash browns we used southern style
  • 1 onion chopped
  • 1 cup cheddar cheese shredded
  • Salt and pepper to taste
  • Cooking spray

Instructions

  • Preheat oven to 350°F
  • Spray a large skillet with cooking spray to medium heat. Cook onions for 2 minutes then add sausage. Cook sausage until no longer pink. Drain and move the sausage and onions to a large mixing bowl.
  • Add hash browns to skillet and follow package instructions for cooking.
  • Add hash browns and ½ of the cheese to the sausage and mix well. Salt and pepper to taste. Transfer the sausage hash brown mixture to a 9×13 baking dish. Sprinkle remaining cheese on top. Bake 8-10 minutes or until heated through and cheese is melted.

Recipe Notes

  • Use whatever type hash brown you like.
  • You can use any type of ground sausage you like. We used medium.
  • You can remove the bacon and add another ½ pound to 1 pound of ground sausage.

    This recipe is so easy to make as well as delicious. Idid not make any changes to the recipe. I cooked the recipe per instructions and froze the leftover to reheat in the microwave.

  2. Great casserole. I used the sausage and the bacon but added a few more potatoes. A little time consuming to put together but tasted great and was a big hit at our Christmas brunch. Will make again. Oh, I added a few red pepper flakes for a small amount of heat.
